Mix, mix, sprinkle...

Due to all the rainy, stormy weather there has been a lot of cooking going on in our kitchen. Some of it very healthy and some of it a little bit naughty! The naughty recipe is the one I will share. These are a variation of a chocolate slice by the indispensible Women's Weekly.

Minnie is the chief mixer. I forgot to move the sea salt and sugar basin from her corner of the bench... Let’s just say we couldn't really taste the salt over the mass of coconut that she sprinkled on top.

No photos of the finished slice, sorry. Ate it all before I remembered to take a shot.

Minnie's Chocolate and Cherry Slice
1 cup plain (all purpose) flour
1/2 cup sugar
1 cup desiccated coconut
1/3 cup chopped glace cherries
1 TBL spoon cocoa powder
185g butter
1/2 tsp vanilla

1 cup icing sugar
2 TBL spoon cocoa powder
30g butter
1 1/2 TBL hot water
Coconut for sprinkling

Sift dry ingredients into a large bowl, add melted butter, chopped cherries, and vanilla and mix well.
Press mixture over base of a greased and lined 28cm x 18cm lamington tin (slab tin).
Bake in a moderate oven (180'c) for 20 minutes.
Cool in tin.
When cold, ice with chocolate icing and sprinkle with extra coconut. Cut into bars when icing has set.

Sift icing sugar and cocoa into a small bowl. Add melted butter and hot water and mix well, until smooth and glossy. You may need a little more water - see how it goes.
